The frost is on the pumpkin...

Muffins.  No wait.  It is unseasonably warm lately with night time temperatures in the fifties.  The average first date of frost here is October 9th, but I wonder when that will happen this year.  No matter, I didn't plant a garden this year,  I did, however, make these muffins this morning.  The recipe is from Micaela several years ago, but this is the first time I've made them.  They are wonderful!  Of course I tweaked them a teensy bit, but not a lot as I am prone to do.  Here is the original recipe, written in her own hand:


Here are my tweaks:
I used Namaste gluten-free baking flour, doubled the butter to 1 cup, did not use the streusel, and baked for 20 minutes at 350F.

The recipe above is in a little book that Micaela made for me with a few of her favorite recipes.  All the ones I have tried are delectable.  She took an old spiral-bound Campbell's Soup promotional cookbook and added some new pages in the front.  They are all handwritten, and thus easily smeared, but next time I will cover the page with plastic wrap before I start.

I wish I were more...

Faithful, but I'm not.

Work just sucks most of everything out of me.  I wouldn't be so complain-y except that I know what it's like to not work for two years.  It was heavenly, just heavenly.  I'm not sure I got a lot more things done, but it felt like I did.  And I just felt more at peace.

Enough whining.

This is what I did take time to make last week  King Arthur Flour's Superfast Strawberry Cobbler.  It's from their 200th Anniversary Cookbook.  Using Namaste Perfect Flour Blend made it gluten-free and is very much like using wheat flour.
I've used this recipe to make every kind of cobbler there is.  This time it was blackberry.  I've also used peaches and raspberries, mixed berries, apricot, and maybe some that I forgot.  I usually double it and tweak the sugar according to the fruits I use.  This time I added more sugar because blackberries are more tart than strawberries.  It's a common recipe that you can find all over the web.  Pioneer Woman's Blackberry Cobbler is a similar recipe, but not exactly the same.

I also made this.  That was a HUGE mistake.  I was trying to make something resembling potatoes that wouldn't raise Jeff's blood sugar.  Well, this is not it.  He took a bite and just couldn't eat the rest.  I tasted it and I agree completely.  It vaguely resembles Hash Brown Casserole, but only vaguely. There are all these recipes on the web that use cauliflower in place of potatoes and now I wonder if they are all that poor a substitute?  This recipe pretty much guarantees I won't be trying any more of them.

Speaking of his blood sugar, he is being almost a saint in his eating habits!  Every once in awhile he veers off, but not often.  We are going to the gym almost every other day, too.  Those two things keep his readings around 90-130, which, for him are almost a miracle.  He wants to eat vast quantities of carbs, mostly pizza and bread, but he does not.  His last MD visit was a turning point because his A1c was 9-something and that was the highest it had ever been.  Something just snapped in his head and now he is on the straight and narrow.

Something else I've been thinking about is Christmas.  With the advent of Pinterest, we are assaulted with DIY everything, which I actually like.  Now, as above to find the time!

In which we make treats for our beloved spouse's work friends...

These to be exact, which were well-received.  I have had this recipe for at least 35 years and had not drug it out for probably 30 of those years.  I remembered they were good and I happened to have all the ingredients when I belatedly decided to make him something to take for Valentine's Day.  So...here you go!

Peanut Butter Swirl Bars

1/2 cup  peanut butter
1/3 cup butter, softened
3/4 cup packed brown sugar
3/4 cup granulated sugar
2 large eggs
1 Tablespoon vanilla extract
1 cup  flour
1 teaspoon baking powder
¼ teaspoon salt
2 cups (12 ounces) semisweet chocolate chips

Preheat oven to 350 degrees F.
In a large bowl with an electric mixer on medium speed, beat peanut butter, butter, brown sugar, and granulated sugar until creamy.  Gradually add eggs and vanilla; beat well. Mix  flour, baking powder, and salt then add to butter mixture, beating well. Spread batter in an greased 9- x 13-inch pan. Sprinkle with chocolate chips.
 Bake 5 minutes. Remove from oven. Run a knife through batter to swirl chocolate. Return to oven; bake 30 additional minutes. Cool completely in pan on a wire rack. Cut into bars.

Wow...

The traffic to my blog has sure increased since I posted the Rosett pattern.  I'm not one of those people who monetizes their blog and so seeks traffic, but it's interesting.  I think I get a lot from the grain-free chocolate chip cookie recipe, too.  At least it gets a lot of pins!
